Protein: Hemp contains 25% - 31 % protein, second
only to soy (35%), but the protein in hemp foods is more easily
digestible, because hemp contains globular proteins, albumin 33% and 65%
edistin (a Greek word meaning edible), which have structures very
similar to proteins made by the blood, which makes them readily
digestible. What is unique about hemp seed protein is that 65% of it is
globulin edistin. That is the highest in the plant kingdom. A handful of
hemp seed provides the minimum daily requirement of protein for adults.
