The other day I had just enough extra young coconut pulp on hand from making another recipe that I decided to throw it into a blueberry smoothie. It was SO good! Smooth, creamy, flavourful, and full of nutrition. You could replace the blueberries with any other berry that you have on hand. Strawberries, blackberries, or raspberries would be great. The hemp seed, bee pollen, and goji berries turn this into a superfood smoothie! If you haven't had Jarrah bee pollen, you're in for a special treat. Besides being full of vitamins, minerals, enzymes, and amino acids, this special Australian pollen is super crunchy and sweet! In fact, I do not eat any other bee pollen. Nothing else compares. Whenever I go to Australia I eat jarrah bee pollen by the kilogram because it was so accessible and inexpensive.
Creamy Blueberry Coconut Smoothie Serves 2 1 1/3 cup almond milk* 1 - 1 1/3 cup frozen blueberries 2/3 cup packed coconut pulp 1 1/2 tablespoons hemp seeds 2 tablespoons goji berries 1 tablespoon jarrah bee pollen 1 tablespoon coconut nectar, or to taste 1 tablespoon raw cashew butter Blend all ingredients in a high speed blender until smooth. Sprinkle more bee pollen on top. Drink immediately. * Almond Milk Rinse and soak 1 cup of almonds in enough water to cover plus one inch extra, for 8-12 hours. Drain and rinse. Blend the almonds with 4 cups water. Strain with a nut milk bag.
