
When I saw an abundance of ripe mangoes at the store this weekend I knew that I had to buy a few and feature them in a recipe. For no apparent reason, white chocolate came to my mind and inspired today's combination. I love the way it turned out! It's rich, creamy, and full of flavour. I hope you like it too! I layered it with diced juicy kiwi, mango, and crunchy coconut chips. Feel free to dress it up however you like.

White Chocolate Mango Mousse 2 cups diced mango (lightly packed) 2/3 cup cashews (very full) 3 1/2 tablespoons maple syrup 1/2 teaspoon lemon juice 1 tablespoon + 1 teaspoon melted cacao butter Blend all but the cacao butter until completely smooth and creamy. Add the butter and blend to incorporate. Chill the mousse in the fridge for 12 hours before eating.
