
I used to love granola for breakfast when I was a child. It was a special treat that my mom only bought occasionally and only let me have a small bowl of it - maybe because she knew how unhealthy it is. Regular granola is filled with sugar and unhealthy oils. I don't know about you but that's not exactly what I want to put in my body, and especially don't want to start my day with such a breakfast. My raw granola is sweetened, yes, and contains some oil but it's natural sweetener and healthy virgin coconut oil that is so nourishing to our brain and body.

This granola is so nutritionally dense that you don't need too much. Have it with fresh raw almond milk, and berries or banana on top for an incredible breakfast treat.
Nutty Goji Berry Pomegranate Granola 1 1/2 cups
almonds, soaked 8-12 hours 1 1/2 cups
cashews 2/3 cup buckwheat groats, soaked 2-4 hours 1/2 cup
pumpkin seeds, soaked 4-6 hours 1 1/2 cups
shredded coconut or
coconut flakes* 1 cup
goji berries, soaked 5 -10 minutes in just enough water to cover them 1/3 cup dried
pomegranate seeds 1/2 cup pitted, packed medjool dates 1/3 cup maple syrup or coconut nectar 4 tablespoons melted coconut oil
2 tablespoons goji berry soak water 2 teaspoons
vanilla bean powder Drain and rinse the nuts, seeds, and buckwheat very well. Roughly chop the cashews and almonds in a food process and add them to a bowl along with the buckwheat, coconut, goji berries, and pomegranate. Process the dates down to a paste in a food processor. Add the sweetener, coconut oil, soak water, and vanilla bean. Process until smooth. Toss this mixture with the nuts/seeds. Spread on 2 dehydrator sheets. Dehydrate at 145 for 1 hour and then at 115F for 26-30 hours, or until dry and crunchy. Store in a sealed container at room temperature. *If using coconut flakes, process them along with the nuts.
