Today I have an energizing snack to share with you. These dense trail mix bars are packed with highly nutritious ingredients and are super tasty! The bars were good by themselves but I thought they'd be even better with a coating of chocolate… white chocolate… and a garnish of crunchy pistachios.
Raw Trail Mix BarsBars 1/2 cup almonds 1/2 cup cashews 2 tablespoons pumpkin seeds 1/2 cup pitted dates 1/3 cup hunza raisins 1/4 cup pistachios 1/4 cup goji berries 1/4 cup green hemp seeds 1/4 cup mulberries 3 tablespoons chia seed, ground 2 tablespoons jarrah bee pollen, optional 1/2 teaspoon vanilla bean powder 1 tablespoon water Grind the almonds, cashews, and pumpkin seeds to flour in a food processor. Add the dates, raisins, goji berries, hemp seeds, mulberries, ground chia, and vanilla. Grind until all ingredients are broken down to crumbs. Note: if your dates are a bit firm, chop them before grinding. Add the bee pollen and water. Pulse to combine. Press the dough into 2/3 - 3/4 of an 8x8" pan (if you fill the whole pan that bars will be too thin). Chill in the freezer for 2-4 hours (or fridge for 6 hours) and then slice into bars.
