Confessions of a Raw, Unpasteurized Spanish Almond Obsessive

I'm not going to lie, I'm a bit of an almond obsessive. I eat them raw, unpasteurized, and sprouted. I even have sprouted stone ground almond butter. I know what you're thinking: "That's a lot of almonds." But trust me, once you try them, you'll be hooked too.

There's something about the combination of sun, rain, healthy soil, and almond trees in Spain that creates almonds of incomparable quality and flavor. They're nutty, buttery, and slightly sweet, with a satisfying crunch.

I love eating raw almonds as a snack. They're a great source of protein, fiber, and healthy fats. They're also packed with vitamins and minerals, including vitamin E, calcium, and magnesium.
