The other day I was craving something creamy and nourishing for lunch. I had a package of wakame seaweed, a bunch of zucchini, and lots of cashews… so this yummy dish was born. When wakame is soaked, its actually got the texture of soft cooked noodles so sometimes I like to combine it with zucchini noodles for raw pasta. I garnished it with diced red pepper, and a sprinkle of hemp seeds and nutritional yeast to be like Parmesan, and smoked paprika for a flavor kick.
Creamy Zucchini Alfredo Alfredo sauce Very full 3/4 cup cashews 1/3 cup water 1/4 cup lemon juice 1 tablespoon olive oil 1 clove garlic 2 teaspoons apple cider vinegar 1/2 teaspoon Himalayan salt Blend all ingredients until completely smooth and creamy. Toss with the noodles. Noodles 3-4 zucchini, peeled and spiralized Soaked, roughly chopped wakame, optional Tasty Toppings
