Sometimes you just need a crunchy, healthy snack. Whether its while watching a movie, or in the middle of the day when you want a hint of sweet and a lot of nutrition, when you're on the run… or you just feel like it. Today I'm sharing a delicious superfood nut crunch recipe with you. In fact I'm munching on some right now while typing this post! This crunch really packs a punch. The malty flavor of the maca shines through, you taste the caramel flavor of the lucuma, and the vanilla bean too. Feel free to use a completely raw sweetener instead of the maple syrup. Superfood Nut Crunch 1 cup truly raw cashews 1 cup coconut chips 1 cup pecans 2/3 cup mulberries 7 tablespoons maple syrup 2 tablespoons lucuma powder 2 tablespoons maca powder (if you scroll down the maca page, you'll find my video for a raw vegan cinnamon maca milkshake. Its so yummy!) 2 tablespoons mesquite powder 1 teaspoon vanilla bean powder Toss all ingredients together in a large bowl. Spread the mixture over two paraflexx dehydrator sheets and dehydrate at 145F for 1 hour. Turn the temperature down to 115F and continue dehydrating for 24-26 hours or until the coating is dry. Store in a sealed bag or container at room temperature. Warning: This munchie mix won't last long! I keep a stash in my purse, in the car, and in the cupboard… but its quickly dwindling!
